Questions
Should I apply if I only match 60% of the requirements?
Usually yes, and the analysis will tell you which 40% you are missing and whether any of them are genuinely hard requirements. Postings routinely list more than the role needs.
Does it know the company?
No. It reads only the text you paste. Anything it said about the employer beyond that posting would be invented, and it is instructed not to.
